From our sea

Our story begins at the port: we head out to fish and receive fresh fish and seafood from Menorca every day, responsibly caught by our vessel La Rosa Santa Primera. That closeness allows us to treat each ingredient as it deserves: just landed, fully traceable, and at its finest seasonal moment. We cook without artifice, respecting flavours and textures: broths made from bones, brief grilling, light frying. From sea to table, we honour those who catch it and the environment that makes it possible, prioritising selective fishing methods and respect for closed seasons.

From our countryside

In the Menorcan countryside, meat with real character is raised on the island’s pastures with a strong commitment to animal welfare. We select cuts that express our land —tenderloins, entrecôtes, cheeks— and handle them with patience and precise heat to preserve juiciness and flavour. We prioritise seasonal cuts and balanced ageing, pairing them with house-made stocks and sauces. Every bite respects the work of local livestock farmers. Whenever possible, we use the whole cut, embrace alternative butchery choices, and reduce waste to tell the story of the island from its source.

From our land

Menorca’s orchards and market gardens provide us with local, zero-kilometre fruit and vegetables: sweet tomatoes, fragrant melons, fresh herbs, and microgreens that change with the seasons. We work with small harvests, picked at just the right moment, to preserve aroma, colour, and texture. We apply techniques that enhance their identity —roasting, brief blanching, Mediterranean dressings— and make use of skins, juices, and seeds to reduce waste. In this way, each dish tells the story of the island’s landscape and the sensitivity of those who cultivate it: freshness, honesty, and a true taste of place.

From our people

Some flavours only exist thanks to the hands of our people. We bring in artisan cheeses from the island, wines from small wineries, oils and cured specialities, sourdough breads, traditional sauces, and handcrafted mozzarella. These are products shaped by history, technique, and patience, expanding the map of our taste. We select the best of each season, treat it with respect, and weave it into our menu so that every guest can discover Menorca through the work of its artisans. A living tradition in dialogue with an honest, contemporary cuisine.
